Food in Kyiv

Guests and residents of the capital can find a vast variety of food and beverages in Kyiv. On one hand, there are thousands of cafes and fast food outlets, hundreds of restaurants, bars and pubs, which serve local and international meals and drinks. On other hand, there are hundreds of hyper- and supermarkets and convenience stores, thousands of niche stores, and dozens of online food stores where one can find hundreds of local and international brands of fresh and packed food in Kyiv. There are a few dozen authorised and unauthorised farmers’ markets in the city (usually in close proximity to a metro station or a bus terminal in a popular area). Also, there are a few dozen companies that can deliver fresh and packaged food and/or cooked one to your home, office, or a party place.

Ukrainian Traditional Food

According to TasteAtlas 2023 ranking of traditional food, Ukraine is in the middle of the list of 95 ranked countries; it is also in the middle of the list of 41 ranked European countries. Compared to its neighbours, Ukraine follows Turkey, Poland, Hungary, Romania, and Bulgaria; it stays ahead of Slovakia, Belarus, and russia.
 
Ukraine’s traditional food has a long history and may have its roots in the Cucuteni-Trypillian culture that began developing about 8,000 years ago. Ethnographers and food experts often highlight the following nine features of Ukrainian traditional food:
 
  • Extensive use of cereals and eggs,
  • Conscious use of high-calorie meals,
  • Regular eating of porridges and other hot dishes,
  • Preference for the boiled and stewed meat over fried, baked, smoked, or cured/salted one,
  • Domination of boiled fruit/berry and fermented vegetable beverages over juices,
  • Preference for the dishes, which require little attendance and basic-to-medium proficiency,
  • Use of multiple ingredients and food processing methods for cooking soups/main dishes, and
  • Significant seasonal and regional differences in cooking ingredients and techniques.
It looks like the following seven factors have determined the spectrum of the ingredients, recipes, and cooking methods used in Ukraine today:
 
  1. soil & climate,
  2. prolonged reliance of Ukraine’s population on subsistence agriculture and horticulture,
  3. uneven trade development and limited demand for innovations,
  4. destruction caused by large-scale wars and long-term occupations by other nations,
  5. local traditions and religious food laws,
  6. relatively slow social and national development, and
  7. low demand for outdoor eating caused by low labour productivity and low average household income.
